Simple Quick Shepherds Pie

Simple Quick Individual Beef Shepherd’s Pie’s / or One Family Size

2 lbs mashed potatoes
1 1/2 lbs ground beef
1 Tbsp oil (canola or olive oil)
1/2 large onion, finely chopped
3 garlic cloves, minced
2 Tbsp all-purpose flour
2 bay leaves
1 cup beef broth (or chicken broth)
3 Tbsp diced tomatoes
2 tsp Worcestershire sauce
½ tsp ground black pepper
1 tsp salt
1 cup frozen mixed vegetables, more if
1/2 cup of shredded cheddar cheese (optional)

Prepare your mashed potatoes. ( for a simple short cut you can use box style however the consistency has to hold up)

** I layer my meat filling on top of a thin layer of mashed potatoes and then another layer on top. I also add some cheddar cheese on top of meat.
meat and vegetables-
Preheat oven to 375°F.
In a skillet, saute ground beef, breaking apart the meat as it’s cooking.
Once the beef is cooking, add chopped onions and oil. Cook until onions are tender.
Stir in the flour and garlic, add the bay leaves. Pour in the broth.
When the mixture thickens, add in the chopped tomatoes, Worcestershire sauce, salt and pepper. Bring to a simmer.
Add in the vegetables and bring to a simmer again, stirring as needed.
Transfer the meat mixture to the bottom of a Your individual Ramekins or casserole dish, be sure to discard the bayleaves. Top with creamy mashed potatoes.
With the back of a fork, add design to potatoes.
Bake 25-30 minutes, until potatoes start to turn golden.
