Cast Iron Meatball Marinara Subs

Brace yourself!!

This Rustic Italian Meal is Simply Comforting on so many levels. The delicious smell of fresh baked French Bread. The bubbling sauce around the beef and sweet Italian Sausage meatballs just takes you on a culinary journey.

Homemade French Bread (2)
2 cups of warm water
1 Tbs. active yeast
2 1/2 Tsp. Of sugar
5-6 cups of flour ( I used 5 )
2 1/2 Tsp. Of sea salt
1 Tsp. Olive oil

In a small bowl combine the warm water, yeast and sugar let sit for about 5 minutes or until it has began to foam. ( I find the longer the better the results )
Place 2 cups to start of your flour and your salt to your yeast mixture in a large mixing
Begin to stir and knead by hand or use your dough hook in a stand mixer.
Add the rest of the flour 1/2 cup at a time until dough is smooth but not sticky.
Rub the olive oil around your dough ball. Let rest for 15 minutes.
Turn the dough onto a floured surface and divide into half.
Roll one half into a rectangular shape. Start from the longest end side and begin to roll into a cylinder. Pinch the ends in and the seams. Repeat with the second dough. Let rise for 45 minutes- 1 hour . Make slits on the top with a knife, brush with some olive oil and bake @ 400 for 20 – 22 minutes. At this time I place the bread and the meatballs to cook at the same time.

The Meatballs Marinara
1 lb. package of ground beef lean is best
1 lb. package of ground sweet Italian Sausage
1 egg
1/4 cup of Italian style bread crumbs
1 tbs. of milk ( optional ) adds extra moisture
1 tbs. of dry oregano
1 tsp. Dry Sweet basil
1/2 tsp. Granulated Garlic
1/2 tsp. Onion powder
Pinch of salt and pepper
Sprinkle some red crushed pepper flakes
About 1 cup of mozzarella cheese for the sandwiches a few provolone slices to layer on the bottom of bread
Marinara sauce ( make your own or use your favorite jar )

Preheat your oven to 400
Mix well and assemble meatballs, I used an ice cream scoop to make them all the same size.
Place the meatballs in a pre- heated cast iron skillet brown on each side for about 10 minutes on medium high heat.
Once browned on both sides, drain any oil, pour your marinara sauce directly in the cast iron skillet over the meatballs.

Bake with the bread @400 for 20-22 minutes the last 5 sprinkle some mozzarella cheese in the skillet .
