Summer Grilling Shish- Kabobs with Mushroom Couscous & Ginger Spiced Cucumber Salad

Summer Grilling always screams Shish- Kabobs or Kebobs. No matter how you pronounce it Delish Summer Eats it’s all the same to me.

If you can marinate your meat over night it’s even better. Some times it’s a last minute decision and plans change.
Here is a Simple Beef Marinade that will surely give you tender deliciousness.

Be sure to soak your wooden skewers for a couple of hours make sure they are completely submerged. I like to use water and a little white wine.

For the marinade
Extra-virgin olive oil
Soy sauce
Red wine vinegar
Black pepper

I season my veggies with just a little S&P and olive oil toss and refrigerate until ready to assemble.

I made this Simple Dinner with Mushroom couscous, used chicken broth instead of water sautéed mushrooms and onions. The Ginger Spiced Cucumber Salad just paired so lovely. For the Salad you will need 1/4 cup of white wine vinegar 1/4 cup of packed brown sugar 2 Tsp. Grated fresh ginger 1 large English cucumber peeled and thinly sliced 1/4 cup of thinly sliced red onion toss together refrigerate and serve chilled.
