Bakery Style Pistachio Muffins

We would purchase our Pistachio muffins from HEB but I haven’t seen them lately and we are craving some!

So what’s better than Homemade Right…

I love Pistachios, so I added a cup of chopped to the recipe.

These were so simple to make and delicious.

1/2 cup of unsalted melted butter
2 large Eggs
1/2 cup of milk
2 cups of all purpose flour
2 tsp. Baking Powder
3/4 cup of granulated sugar
1 3.4 oz. package of Pistachio Pudding mix (instant)
1/2 Tsp. Of salt
1 tsp. Vanilla extract
1 cup of chopped pistachios (optional)
1/4 cup granulated sugar for topping (optional)

Preheat oven to 425
Line a muffin tin bake for 7 minutes reduce heat to 350 and continue to bake for 10 more minutes.
Cool on a wire rack and enjoy!!
