Pumpkin Pancakes

I love making a batch of Pumpkin Pancakes; the house smells just like a Fall brisk day.

Ironically outside it’s like 90+ degrees but that doesn’t mean I can’t pretend Autumn is in the air in my home!!! This recipe yields 12 pancakes. You can also freeze the pancakes in batches and reheat in the microwave.

Pumpkin Pancakes 🥞

Makes 12 pancakes
1 1/2 cups milk ( you can use almond milk )
1 cup pumpkin puree
1 egg
2 Tbs. vegetable oil
2 Tbs. vinegar
2 cups all-purpose flour
3 tablespoons brown sugar
2 Tsp. baking powder
1 Tsp. baking soda
1 Tsp. ground allspice
1 Tsp. ground cinnamon
1/2 Tsp. ground ginger
1/2 Tsp. salt
