Turkey Bolognese with Zucchini Noodles
1 Tbsp of Olive oil
¼ cups Of chopped onion
1 stalk of celery, chopped finely
2 small carrots minced
1 lb Of Ground Turkey
15 .oz can of diced tomatoes with juice
¼ cups of parmesan cheese (optional)
4 medium zuchini
1.Start a medium sauce pan on medium-high heat, pour the olive oil. Heat for a few seconds stir then add your onions. Cook and stir for about 5 minutes, then add the carrots and celery. When you hear a nice sizzle reduce your heat to low, while stirring occasionally cook for about 10 minutes.
2.When the carrots, celery and onions are softened and the onions are golden add the ground turkey. Bring the heat to a medium-high. Start breaking up the turkey with a fork until it is cooked through and no pink remains. Add the diced tomatoes stir, continue cooking until the pan is nearly dry about 10 minutes.
3. Spiralize the zucchini and divide among the 4 plates. Top each plate of Zucchini with 1 cup of meat sauce. Sprinkle some Parmesan on each plate and Eat! ( Parmesan is optional )
